With a revitalized space, a loyal neighborhood following, and a wave of new guests discovering Genghis Cohen for the first time, we’ve launched a playful, high-energy cocktail program built around big flavors, tiki inspirations, and over-the-top fun. We are looking for a Head Bartender to take the reins, execute it with consistency, lead the bar team, and bring your own creative ideas.
The Head Bartender is the leader of Genghis Cohen's bar program and serves as an active presence behind the bar. The Head Bartender is expected to be present during service, leading by example while maintaining exceptional hospitality, beverage quality, organization, cleanliness, and team development. This role partners closely with Call Mom leadership and Genghis Cohen management to execute and evolve the beverage program.
Essential Responsibilities:
Bar Leadership and Service
- Lead the bar team during service while actively bartending.
- Set the standard for hospitality, professionalism and guest engagement behind the bar
- Support a positive and collaborative team environment.
- Be a role model for service standards, cleanliness, organization, and accountability.
- Support floor operations as needed.
Beverage Program Development
- Collaborate with ownership on seasonal cocktail development and beverage menu updates.
- Contribute creative ideas aligned with Genghis Cohen's brand and concept.
- Test, document, and standardize all cocktail recipes, ensuring they are recorded properly and distributed to relevant team members
- Assist in developing specialty beverage offerings, spirit features, and promotional programming.
Inventory and Cost Controls
- Manage weekly and monthly beverage inventories.
- Investigate and address inventory variances.
- Assist management in achieving beverage cost goals.
- Ensure proper storage, rotation, and organization of all beverage products.
Ordering and Vendor Management
- Manage beverage ordering for liquor, beer, wine, mixers, garnishes, and bar supplies.
- Maintain appropriate pars and inventory levels.
- Build and maintain productive relationships with vendors
- Coordinate deliveries and ensure invoices are accurate.
- Identify opportunities for cost savings and product improvements.
Staff On-boarding, Training and Coaching
- Lead onboarding and training of all bartenders and bar support staff.
- Develop team members' product knowledge, technique, and hospitality skills.
- Provide ongoing coaching and performance feedback.
- Conduct regular beverage education sessions and menu trainings.
- Maintain and continuously update the Genghis Cohen Bar Bible.
- Ensure all recipes, specifications, service standards, opening procedures, closing procedures, and operational guidelines are current.
- Develop and maintain training materials for new hires and ongoing education.
- Create systems that ensure consistency regardless of who is working behind the bar.
Sanitation, Safety and Compliance
- Ensure compliance with all ABC regulations and responsible alcohol service requirements.
- Maintain a current RBS card and ensure all bar team members do the same.
- Maintain a clean, organized, and health-department-compliant bar environment.
- Monitor bar equipment upkeep and spearhead repairs
Qualifications:
- Minimum 3 years of high-volume bartending experience.
- Minimum 1 year in a leadership, lead bartender, or management role preferred.
- Strong cocktail, beer, wine, and spirits knowledge.
- Experience managing inventory and beverage ordering.
- Ability to work nights, weekends, and holidays.
- Current California RBS Certification required.
- Servsafe Certification required
