Summary
The Sous Chef plays a vital leadership role in the culinary operations of Austin Sports Club. This position supports both the Executive Chef and Executive Sous Chef in running the kitchen, leading the line, maintaining consistency, and ensuring our food reflects the quality and vision of the brand. The Sous Chef will serve as a hands-on leader who upholds standards, delivers exceptional execution, and contributes to a kitchen culture defined by discipline, camaraderie, and pride.
Key Responsibilities
Culinary Execution
- Lead by example during service—working expo, grill, sauté, or other stations as needed.
- Ensure consistent execution of recipes, flavor profiles, and plating standards.
- Conduct daily line checks, taste-outs, and station inspections before service.
- Support high-level execution for VIPs, private events, and special programming.
Prep & Production Leadership
- Oversee daily prep to ensure readiness, accuracy, and organization.
- Maintain detailed knowledge of all recipes, prep lists, portioning, and systems.
- Support the development and enforcement of prep guides and SOPs.
- Monitor quality control throughout all prep and production processes.
Team Support & Training
- Assist in teaching culinary techniques, station skills, and service flow to cooks.
- Contribute to a culture of accountability, teamwork, and forward momentum.
- Provide real-time coaching during service to maintain standards and consistency.
- Help onboard new cooks with clear expectations and hands-on guidance.
Kitchen Operations
- Help manage day-to-day kitchen flow, cleanliness, safety, and organization.
- Ensure compliance with health, food safety, and sanitation standards.
- Assist with receiving orders, labeling, storage, and proper product rotation.
- Support equipment maintenance, reporting needs before they impact service.
Cross-Department Collaboration
- Communicate clearly with FOH leadership to support timing, pacing, and service quality.
- Work with the bar and events teams on special activations and menu needs.
- Contribute to R&D sessions and support rollout of new menu items.
Financial & Inventory Support
- Assist in managing waste, portioning, and ingredient usage to support food cost targets.
- Help track inventory, prep levels, and purchasing needs in alignment with leadership.
- Identify inefficiencies and propose solutions that protect margins and quality.
Culture & Brand Integrity
- Uphold a kitchen environment that mirrors the strength, refinement, and spirit of Austin Sports Club.

Qualifications
- 2–4+ years of experience as a Line Cook, Lead Cook, or Junior Sous in elevated or high-volume kitchens.
- Strong technical skills with the ability to run multiple stations.
- Familiarity with scratch cooking, seasoning fundamentals, and plating finesse.
- Natural leadership ability with a desire to grow into higher responsibility.
- Ability to thrive in a fast-paced environment while maintaining focus and precision.
- Excellent communication, organization, and attention to detail.
- Passion for hospitality, culinary craft, and the culture of sport and gathering.
