Bakery Sous Chef, WatchHouse New York.

The Bakery Sous Chef at WatchHouse, will play a key role in supporting the Bakery Manager to ensure the smooth daily operation of the bakery. This role involves maintaining high-quality standards, assisting with production, and helping to improve our food offerings while working towards the bakery’s long-term growth.

A hands-on and detail-oriented professional, the Bakery Sous Chef is passionate about quality, consistency, and craftsmanship. They will be actively involved in daily baking and production, helping to lead the team in delivering exceptional products.

Responsibilities include assisting with production schedules, ensuring all baked goods meet quality and budget standards, and maintaining food safety compliance. Additionally, they will help train and develop team members, ensuring the bakery operates efficiently while meeting all health and safety regulations.

Directly Reports into: Bakery Manager, New York.

Key Responsibilities

Production & Quality Control

  • Aid the Head Baker in ensuring all baked goods meet the highest standards of quality, consistency, and presentation.
  • Support with daily production of cakes, pastries, and viennoiserie, ensuring all products adhere to recipes and specifications.
  • Help oversee ingredient preparation, mixing, proofing, and baking processes to maintain efficiency and consistency.
  • Assist in testing and refining recipes to ensure continuous improvement and innovation.
  • Monitor product quality throughout the day and communicate any necessary adjustments to the team.

Operational Support & Team Coordination

  • Help the Head Baker with organizing production schedules to meet demand and ensure timely order fulfilment.
  • Support with staff training on baking techniques, recipes, and kitchen best practices.
  • Aid with managing inventory levels, ensuring accurate ordering of ingredients to minimize waste and control costs.
  • Assist in ensuring the bakery remains a well-organized and efficient workspace.

Health, Safety & Compliance

  • Help maintain compliance with health and food safety regulations, ensuring all team members follow best practices.
  • Support with implementing and monitoring cleaning schedules, ensuring the bakery remains spotless and well-maintained.
  • Assist in maintaining proper records, including temperature logs, ingredient tracking, and quality control checks.

Collaboration & Innovation

  • Work closely with the Head Baker to support new product development (NPD) and ensure smooth product launches.
  • Aid with testing and implementing new baking techniques to keep the menu fresh and innovative.
  • Help train team members on new recipes and ensure consistent execution across all baked goods.

What We’re Looking For

  • 2+ years of professional baking experience in a high-end bakery or patisserie.
  • A genuine passion for artisan baking, ingredient quality, and craftsmanship.
  • Strong attention to detail and commitment to consistency.
  • Ability to work efficiently in a fast-paced, high-volume environment.
  • Knowledge of food safety and hygiene regulations (DOH and NYC regulations)
  • Excellent teamwork and communication skills—able to support, motivate, and train staff.
  • Proficiency in using bakery equipment and willingness to learn.
