Il Buco al Mare is Donna Lennard’s newest restaurant located in Amagansett at 231 Main Street.

Inspired by our sister restaurant, Bottega il Buco, in Ibiza, Spain, and our past pop-up in Montauk, the restaurant offers ingredient-driven cuisine— a telltale to the original il Buco.


The Cuisine:

Il Buco al Mare’s simple, relaxed menu presents the best local seafood & produce— Ancient grain

focaccias, imported tinned fish from the Iberian Peninsula and Italy, and seasonal fare from

our wood burning oven

The unique wine list highlights small, multi-gener­ational producers focusing on coastal regions and wines touched by the sea to capture the feeling of ‘al mare’.

  • Who you are:
  • An integral member of the restaurant’s Service team, the Bartender is a wealth of knowledge of all cocktails, spirits, wine, beer, and beverage selections and constantly delivers excellence and hospitality. The Bartender is responsible for production of all beverage orders coming from the dining room guests and must have a high level of food and menu knowledge to be able to support the team on the floor, answer questions from guests regarding beverage selections, and be a leader on the Service team.
  • What you’ll do:
  • Greet bar guests and make guests waiting for tables feel welcomed and acknowledged.
  • Ensure proper measurements of cocktail ingredients, especially signature cocktails.
  • Ensure that a credit card is used to open any tabs that are not being closed right away.
  • Ensure that all drinks are correctly entered on all checks.
  • Maintain correct pars of beers, wines by the glass, juices, and waters in bar refrigerators.
  • Maintain appearance of bar in an on-going manner throughout service.
  • Follow and complete closing bar check list prior to departure unless otherwise assigned by management.
  • Accurately maintain the organization and cleanliness of the bar and the front lounge area in accordance with Health Department standards
  • Make sure to have all ingredients and garnishes needed for preparation of beverages and signature cocktails.
  • Leave the bar fully stocked at the end of the shift.
  • Maintain expertise on food menu, wine menu, cocktail menu.
  • Required Skills
  • Commitment to Italian beverage culture and Campari
  • Knowledge of Specialty and Classic Cocktails
  • Knowledge of European coastal Wines, Beer, and Beverage Offerings
  • Menu Knowledge and Ability to Suggest Beverage Pairings
  • Proper Steps of Service
  • Communication With Staff, Management, and Kitchen
  • Experience in Fast Paced Bar Environment
  • Ability to stand or walk for long periods of time
