Job Summary
Responsible for oversight of all bar employees and daily operations of Punch House and Tack Room, two cocktail bars within Thalia Hall at 1227 W 18th St in Pilsen. The Beverage Manager must maintain and improve all facets of daily bar operation and execution of the bar team, using the mission statement and guiding principles as anchors for decision-making and cultivating culture. The Beverage Manager is also directly involved with the menu’s creative process and event curation, working directly with the 16OC Beverage Director.

Summary of Essential Job Functions

Leadership

• Be the guiding force behind the bar staff, offering mentorship when possible and pointed direction when necessary to remain on task and improve the bar skills of each team member
• Maintain a professional presence at all times to serve as an example for the rest of the team
• Work with 16OC Beverage Director to execute monthly training sessions to grow the knowledge base and skill set of the bar staff

Financials

• Analyze financial data to adjust menu offering and note any unusual occurrences
• Work to maintain an average monthly cost of goods sold rate of less than 20%
• Work to maintain an average monthly comp/shrinkage rate of less than 5%
• Support and grow relationships with brands and distributors as partnerships are developed

Operations

• Manage ordering, receiving and inventory procedures, involving staff when appropriate
• Create staff schedules with at least two-weeks lead time
• Keep all SOP guides and documents up to date
• Ensure complete and efficient bar opening/closing, with each team member sharing duties equally
• Ensure upkeep of stocking and organization of liquor room and prep area, coolers, and bar areas
• Attend weekly manager meetings and see all tasks assigned to completion
• Lead the staffing and execution of beverage components for private events
• Ensure appropriate representation of each bar concept in offsite events and competitions
• Work directly with predetermined beverage partners to execute various activations (holidays, menu placements, takeovers, etc.)
• Identify areas of potential improvement. Examples below:

• Changes to create a more efficient bar set up
• Organization of all storage areas to improve efficiency and maximize space
• Work with the 16OC Beverage Director for seasonal and daily menu curation
• Partnerships for activation in both spaces
