Sous Chef

Job Details

Jacques is a new French bistro opening in late July / early August of 2023 in the LoHi neighborhood of Denvrer.

Serving updated riffs on traditional and forgotten regional French dishes alongside wine and producer-driven cocktails.

The Sous Chef works closely with the Executive Chef/Partner to maintain the highest quality and standards in the daily operations of kitchen. They ensure all pars are met in the prep kitchen and oversee execution of the menus throughout service. This position also has an active role in the management and development of Line Cooks, Prep Cooks and all hourly team members. The Sous Chef will be in charge of holding the BOH team accountable to consistent feedback and career development through their performance objectives.

Responsibilities:

  • Monitor and ensure that standard kitchen operating procedures are enforced
  • Assist the chef team in training and developing team members
  • Manage prep responsibilities for service, including prioritization of tasks and receiving goods
  • Document daily prep team reports
  • Assist the chefs with ordering needs, such as food supplies, chemicals, restaurant supplies and dry goods.
  • Support monthly inventory

Required Qualifications:

  • Minimum 2 year of experience as a Prep Cook, Line Cook, Chef de Partie, Jr Sous Chef, or similar role in a high volume, upscale restaurant
  • Ability to successfully train new Prep Cooks in all functions of their role
  • General knife handling, food safety & sanitation knowledge
  • A positive and enthusiastic attitude, as well as a desire to learn, grow, and develop new skills
  • Excellent communication, organizational, and interpersonal skills
  • Comfortable working in a fast paced and high energy environment
  • Ability to remain calm under pressure
  • A passion for food, exceptional work ethic and dedication
  • Willing to accept guidance in a positive manner and implement the direction in a way that is productive for both you and the team

Preferred Qualifications:

  • Minimum 2 years of experience in an Supervisor, Jr Sous Chef, or similar role overseeing the
  • Prep Team and all prep responsibilities in a high volume restaurant
  • Ability to independently execute recording of inventory
  • Ability to accurately complete daily, weekly, and monthly ordering
  • A proven track record of dependability and a continuous focus on learning and development

Physical Demands:

  • The physical demands for this position are seeing, hearing, speaking, reaching, frequently lifting up to 25 pounds, occasionally lifting up to 50 pounds, sitting, standing, for 4 to 8 hours, bending, and moving intermittently during working hours. These physical requirements may be accomplished with or without reasonable accommodations.

LINE COOK

Applicants will have great attention to detail and high standards of excellence. We are looking for people who are eager to learn and build their skills in the kitchen. The ideal candidate is a motivated self-starter with strong communication and organization skills, who is able to follow instructions and work in a team environment


Desired Experience:

  • 2 years of culinary / food and beverage line position in a high-volume restaurant
  • Good knife skills, plating techniques, and attention to detail
  • Ability to learn and follow recipes to execute dishes and prep
  • Ability to work in a team environment and take feedback well
  • Maintain safe, sanitary and organized work stations
  • Lift and carry 30+ pounds
  • Ability to work long hours standing, shifts will last up to 10 hours
