L’imprimerie in Bushwick is looking for a Head Baker to lead both bread and viennoiserie production.

We are a community bakery in Bushwick providing a welcoming and positive experience to all our community members. With quality-focused, locally-sourced ingredients, we create artisan bread, French viennoiseries, sandwiches and serve Sey coffee.

We are committed to using local farms for our dairy and much of our produce.This includes sourcing wheat and rye berries from upstate farms and milling in-house.

This is a small team of 5 bakers and candidates should have a great deal of respect for their craft and be willing to learn and grow in a small, hands-on and fast-paced environment. Experience in European artisan style bread and in traditional viennoiserie is a big plus.

The successful candidate will cooperate closely with the General Manager and the owner to expand the menu while achieving the required quality and consistency.

This position involves shifts beginning at 2:40am (and 1:40am on Saturday mornings) and candidates must be prepared to organize their schedule accordingly.

Requirements:

  • Demonstrates a great team dynamic, strong work ethic and ability to maintain a positive attitude
  • Is self-motivated, has an inquisitive mind, attention to detail and an eye for quality and consistency
  • Manages, trains and develops a team of 5 bakers
  • Manages daily production for items, including but not limited to viennoiserie, bread, croissant, brioche, cookies and cakes. Daily quality checks of products to ensure consistency and standards are met.
  • Manages ordering and acceptance of daily deliveries and ability to keep things within set cost margins with suppliers
  • Manages organization of kitchen, including organization and cleanliness of dried storage, walk-ins, freezers and fridges
  • Handles daily scheduling and hours
  • Manages food cost and labor cost
  • Strives for continuous improvement and is eager to learn and grow
  • Has a general passion and understanding for all aspects of the baking process: milling, fermentation, mixing, lamination, shaping, and baking
  • Works cleanly and efficiently
  • Is able to follow recipes and techniques
  • Is familiar with bakery equipment: mixers, proofer/retarders, ovens, benchtop mills etc.
  • 4+ years of applicable bakery experience
