About Goosefeather
James Beard nominated Chef Dale Talde is taking traditional Cantonese fair up a notch with Goosefeather, the first concept from Food Crush Hospitality, a partnership between him and his wife, Agnes.
Guests can expect a unique and flavorful dining experience, as Dale pays tribute to the cuisine of Hong Kong, with a focus on noodles, Cantonese barbecue and dumplings. Additionally, the beverage menu at Goosefeather offers an array of traditional offerings with a Hong Kong twist.
The Opportunity
Line Cooks are responsible for ensuring that the culinary & operating standards of Goosefeather are executed within the restaurant. They need to be well versed in the menu and food offerings and know how to cook and plate dishes in a timely manner. They also need to be familiar with and drive sanitation regulations, as well as showcase those standards within the operation.
What You’ll Be Doing
- Prepares all menu items following recipes and yield guides, according to department standards in a time efficient manner.
- Communicates with Front of House to manage timing of courses, any guest feedback, etc.
- Is a team player—supports and assists fellow team members whenever possible.
- Communicates all necessary guest information with the team to set everyone up for success (allergy alerts, VIPs, special requests, celebrations, etc.).
- Maintains sanitation to Department of Health standards; keeps work area clean and organized.
- Maintains complete knowledge of correct maintenance and use of equipment; uses equipment and tools only as intended, properly and safely.
- Inspects the cleanliness and organization of the line and workstations; rectifies any deficiencies.
- Inspects the cleanliness and working condition of all tools, equipment, and supplies, ensuring everything complies with standards.
- Maintains proper storage procedures as specified by Department of Health requirements.
Requirements:
- Ability to reach, bend, stoop and frequently lift up to 50 lbs.
- Fluent in written and spoken English.
- The ability to work independently and as a part of a team. Must approach work with a sense of ownership and urgency.
- Exude excellence in hospitality both for internal and external guests; must be familiar with industry’s best practices.
- Excellent time management, organizational, and problem-solving skills.
- Proficiency in kitchen ticket systems, order management and timing.
- Passion for exceptional hospitality, food, and beverages.
- Flexible work schedules, including nights, weekends, and holidays.
- Minimum 1+ years’ experience as a Line Cook in a high-volume restaurant.
- Culinary Arts Degree preferred.
- New York City Food Protection Certificate (Food Handler’s) required.
