Experienced Pastry Chef needed:
Mourad is a fine dining morrocan restaurant led by James Beard semi-finalist Chef Mourad Lahlou. Our food is a modern interpretation of a cuisine deeply rooted in the past. Chef Mourad's vision pays homage to those roots, taking the culinary resources from the Bay Area and showcasing both the vibrant flavors of Morocco as well as the spirit of innovation from a collaborative team.
Mourad is located at 140 New Montgomery (cross street Minna) in the newly renovated PacBell building. We are looking for motivated and enthusiastic individual who wants to be an integral part of our team.
Pastry Chef:
--Involved in collaborative menu planning with Chef Mourad and CDC Chef Rasika for seasonal a la carte menu, bread program and mignardise to create unified and consistent experience.
--Coordinates and schedule the work for the pastry team. Continuous training and development of pastry team FOH.
--Develops recipes and techniques for food preparation and presentation which help to assure consistently high quality and to minimize food cost. Constant collaborative R+D.
--Creates menu descriptions for all FOH/BOH employees.
--Maintain positive relationship with FOH staff. Lead quarterly training classes.
--Coordinate all private parties and off site events with Culinary Director/Events Team.
--Manage and lead all sourcing, purchasing and maintain relations with vendors and farmers.
--Maintain and track monthly inventory
--Responsible for hiring, scheduling and payroll for all pastry employees. Ensures proper staffing for maximum productivity and high standards of quality
--Assist in planning the yearly budget; projects annual food, labor and other costs and monitors actual financial results; takes corrective action as necessary to help assure that financial goals are met. Must be able to read and understand a P+L
--Ensures high standard of sanitation and cleanliness in line with all Federal/State health code requirements as well as HACCP compliance.
--Safeguards all food preparation employees by implementing training to increase their knowledge about safety, sanitation and accident prevention principles.
--Firm belief in creating a work/life balance for all employees
--Must possess the right mindset to push for daily self-improvement.
--Previous fine dining experience preferred
Salary BOE. Fully paid Health insurance. Two weeks paid vacation.
